Cheese is a nutritious food that made mostly from the cows milk but is also made from the milk of other mammales such as sheep, goats, buffalo, reindeer, camels and even yaks. Ever since man has bred mammals for their milk, they have also utilized the milk they produce for making cheese.

It is evident that cheese has been produced since modern man has come into existence and herding animals, and cheese has now become as common as any other type of food made from milk.

The taste, texture, smell and look of each type of cheese is as unique as the process in which they are made. These depend on the origin of the milk, whether the milk has been pasturized, the butterfat content, the bacteria species and the mold, and the process used in addition to the duration of aging. Additions such as herbs, wood smoke and spices also change the flavor of each cheese, and such additions also vary the colors of the cheese.
